Does this just hold 250g filament spools or can you use larger?

You can use much larger spools but to have it housed inside the case, you have to use the smaller ones. They include 250g of filament on a 200x44mm spool. This is a common size for 250-1000g spools. Larger spools require mounting on the desk/workshop to the side of the printer. Loads of 3D prints to help with this.

Probably a difficult question... as my first printer should I get this one or the Ender 3 v2?

I dont know Ender 3 printer. The Adventurer 3 is the second Flashforge printer I have owned. The Ad 3 works straight out the box and I have had no problems with it I run mine most days and am looking at buying a second one. There are friendly facebook pages where everyone is helpful and full of good ideas.

how big are the models you can make in it?

I have just printed a 3ft tall alien but individual parts are limited to 150mm cubed

Is this printer compatible with mac os? if so does the printer come with software?

The printer doesn’t care what computer you have as long as you can connect via usb or wireless. You do load the printer software from Flashforge which is available for Mac. Don’t forget you may need some design software if you want to make you own designs.
