What size is best for a omelette using 4 large eggs?

If you are talking about an English omelette with filling the larger size is best, if you have a filling it is best to finish it off under the grill. The large size is ideal for making Japanese/Korean egg roll(sometimes referred to as omelette) with or without filling. Suggest you go onto YouTube to see these pans in action to decide which size to use.

Can I use this on a gas hob?

YES! That what I use, very successfully. I heat the base up well before brushing on a little oil or butter. Then I make my egg rolls (great with lengths of cooked asparagus inside at this time of year). A quality product, gas temperature won't warp the base. You can move pan back & forth over flame while cooking.

Is this compatible with a Halogen Hob ?

I bought this for my son and daughter-in-law. They use it regularly on a halogen hob. They haven’t mentioned any problems with this, although we haven’t discussed it.
