I have used Wellburn gourd farm gourd stains very successfully with this product so I assume any wood stain would work just fine, but can't really speak from experience about other stains. I found the product very easy to work with and very sturdy for repairing and filling cracks in gourds but you only have about 10 minutes to work with it (a feature I actually liked)

Q: I have oak stairs and the dog chewed the corner of a couple of them. Can I use this to rebuild the corners?

I don't see why not. If you can smooth it into the shape, it is stainable. I have used it to replace painted wood, never natural, however. the color is beige, and you may need to stain, or enhance your stain, depending on the color of your oak stairs. Easy to work with, and we have even used a toothpick to match "wood grains" and it blends in, no one has noticed a thing. Very good at wear, or not wearing, I should add.

Extremely paintable: the fill content is high. That also means you want a primer under it, so it isn't undermined by the wood giving out...something like a varnish or a paint primer, cured...(because this doesn't penetrate much)..
