Is the safari playset difficult to assemble?

It is very easy to assemble. A lot easier than some of their other playsets

What is the size or height scale of the man and truck? thank you. Will they work with 1/18 scale or 3.75 in. figures?

I don't have it in front of me, but I estimate the truck is probably about a foot long and 6 inches tall, and the man is probably 3.5-4 inches tall.

Can this be used in sand or will it wreck it?

I don't think I would. too many nooks and crannies that would have to be cleaned. I'd stick to inside, but that's just me.
