WHY does a sas to usb adapter cost exactly 29.1996 times more than a sata to usb adapter? You’re not financially rational.

This costs a lot more now. Don't even bother. Get any decent hotswap bay for 5.25-inch bays that supports SAS, attach a SAS JBOD card, and just hotswap the drives in and out, powering them down when your done.
I understand around $300, even $400 for being convenient in a datacenter scenario, but going anywhere over $500 is more expensive than building an entire dedicated PC for this, case, PSU, motherboard, CPU, RAM, JBOD card, cables, and hotswap bay included.
I built a dual Xeon server with 128GB of RAM and the capacity to go to near 2TB for the same amount of money that this currently costs, just to put things into perspective.

Work with a tape unit sas?

Not sure but I don’t see why not. It converts SAS commands to USB And visa versa. I would not recommend however for a permanent tape solution. Most external tape units that I have seen use HBA SAS use SFF-8088 SFF-8644 cables which this is not. Have not dealt with internal SAS drives in a while however. For the price of this device you could get an actual PCI-e SAS card which would provide better performance. In my opinion this device is for reading a SAS drive you pulled out of a server or forensic imaging, basically something that is not permanent. My experience with this device is positive but the write speeds were a little slow for me in windows. Did not do much troubleshooting however so take that with a grain of salt. Industry also makes external thunderbolt 3 tape drives if that is of interest to you.

Does the enclosure allow for a drive to be formatted/wiped, or would we need to purchase the adapter at 3 times the cost in order to do that?

After the SAS drive is connected to the sas enclosure and initialized successfully, it can be used as a disk, and the disk can be read, written, formatted and other operations, just like operating a U disk. Please note If your disk is used,you can find the new add disk in computer. If your disk is new, find it in the disk management. Format first and you can use it.

How long would it take to wipe 6tb sas drive using this adapter and pc?

Divide 6000000 MB by your drive speed (not interface speed, the writing to the surface speed), and you'll get the amount of seconds, then divide by 3600 and you'll get hours. If hard drive writing speed is 150 MBps, then erasing 6TB would take: 6000000/150/3600=11.11 hours.
