..nickname Devil's Dung. Wooo, I knew that this spice smelled straight-up bad until it's cooked, but I had no idea it was going to be so strong! The rich umami flavor that this spice gives is so worth the smell, if you want the authentic taste of exotic foods. I would definitely recommend this spice for the adventurous types.I love to make Indian foods, but I could never quite get the flavors just right until I figured out what the missing spice was. Hing is very hard to find in my area, this is the first that I've gotten to use it, and I love it!It only takes about 1/16 to 1/8 of a teaspoon of hing to flavor a dish, and it's best off as an ehancer instead of the forefront flavor. Sauteeing this in oil, ghee or butter cooks of the stink and creates a wonderful onion-like scent, and then the other ingredients are added to the pan, or the sauteed oil and hing is drizzled over a dish such as curry.I love the spice itself, but the packaging could be better. The carboard tube it comes in does a fair job to down the smell, but the non-resealable foil bag that the hing is inside of doesn't do this spice justice. Restaurant style flavor
I like to dabble in Indian cuisine at home, but i never seem to exactly capture the flavor that I enjoy so much in restaurants. I ordered these Hing Crystals to try and help out with a more authentic flavor, and it worked. Hing has a very distinct flavor and really is essential in creating my favorite dishes from Indian restaurants. Dishes like Masala and several other classics.I started out by making a Masala Chicken recipe that my wife and have both tried at our favorite local Indian restaurant. I have made it before and it was good, but.. not quite right. Following a recipe with the Hing spice added, the dish was almost exactly as we enjoyed it when dining out. I wish I could describe exactly what the Hing crystals add to certain dishes, but it might actually be easier to say what is missing when the Hing is left out.There is a very pleasant smell and familiar after taste to good quality Indian Cuisine. In my opinion (and I am by no means an expert) Hing is one of the ingredients responsible for this in certain dishes, including several of my favorites. For me Hing is one of those rare ingredients that is noticed more when it is missing than when it is there. Without it the dishes that I enjoy the most just don't have the same familiarity, comfort and wow factor. Adding it to the dishes I have prepared at home pushed them from being copycats to being more like I remember from a great night at a restaurant.i have discovered that it is easy to over use Hing, and too much can be really over powering to the unaccustomed palate. Most recipes call for just a pinch in preparing larger portions, and I now follow those instructions to the letter. It is really cool to have a "secret" ingredient that helps me elevate my game in the kitchen when it comes to attempting international recipes.

for the unfamiliar- less is more, wickedly putrid but lends magical taste when done right
It's been a very long time since I worked with heeng (or hing), so long that it is like using it for the first time all over again. You dont forget your first time. If you are not familiar with this, then you may want to educate yourself first. It is not for the weak or wary. LOL. Read on for my description.. I think I used weaker stuff before because I do not remember it being quite this potent. The teeny weeny pack (maybe 1-1.5 tablespoons?) is robust, and not much is needed. The crystals are big, I think I used flakes before. Just use 1 or 2 crystals (size of coarse salt or so) to start. That is likely more than enough for whatever you are creating.Definitely a spice that needs to be used with a light hand, and as a way to enhance other flavors NOT as means to create a flavor in and of itself. Trust me, you do not want this to be the forward flavor (omg no, lol). Because you know what it tastes like on its own? how I imagine dirty feet, armpits, butt, rotting garlic and onions all mixed together would taste. It's fetid. Nearly putrid. Makes you wonder how something like this was even first discovered as something one wants to eat. BUT done right, it does absolutely magical things when combined with other spices, oils, and foods. Definitely for savory applications.Be mindful of trying it by itself, as that is not the resulting flavor (and it will be a taste that lingers all night, and you will wonder if you are rotting).High quality. Small amount that is actually a lot. Try it dissolved in ghee, add it to lentils (I'm always trying to find new ways to have my beloved lentils.)A MUST HAVE once you get to know it. Just.. be easy on how much you use. Trust me.

Far Too Expensive, Bad Packaging for Re-Use...
The packaging was confusing at first, why a bag inside a vacuum bag inside a tube... Well, it's because of how incredibly volatile the smell is. This stuff smells extremely strong, a very putrid smell that soaks through multiple layers of ziplock bags. The packaging works for delivery, but not for use and re-use. I'm struggling to find an appropriate container for this that will contain the smell.For $15, which is considerably higher per ounce from the competition, I do expect a bit better of a comprehensive product. I do not have any experience with Hing/Asafoetida beyond unknowingly eating it at an Indian restaurant, but this really does not strike me as a good deal. It's neither a bulk solution, nor a starter solution - it's just a tiny disposable bag of the ingredient for a ton of money. I would look to the much more value-oriented competition, or maybe a different product that has a clearly well sealed bottle to store it in to begin with. A regular spice bottle will not be sufficient.This is a spice that I will look to getting more of in the future, it seems to be at least one of the ingredients missing in my curries.I ordered this in March 2022, and the package date was August 2021 - the container states best before 18 months of the manufacturing date, so that leaves me with about 13 months of useful shelf life.
