You probably already know what this is if you're reading this review. I haven't tested side by side but people say that the 3mm thick pan heats noticeably more evenly than the 2 or even the 2.5mm. For my purposes, it's perfect. Even simple dishes like some cubed potatoes fried in oil come out perfectly even, without the ring of hot spots you get used to expecting from other materials. The tin darkens a bit after the first few uses, and the exterior copper reddens. This is all fine, and to be expected. It's heavy, but that's what the secondary brass handle is for, and at any rate it's all much lighter than cast iron at this size. This is now the nicest thing in my kitchen, a real pleasure. I expect it to last a few lifetimes. I can only hope that the maestro is passing his craft on to a future generation.

This is an absolutely beautiful piece of functional art! What amazing quality and craftmanship! I am so excited to start cooking with it! I did lots of research before choosing where to buy some copper cookware and I am so happy I found Bottega Del Rame. I ordered one week ago and was pleasantly surprised when it arrived today! I hope to order more in the near future! I highly recommend and love that this is an heirloom that my daughter's will use some day! If you are considering ordering.....do so while you still can! This is a handmade item from a family run business that may not always be around.

best quality and craftmanship. is a pleasure to cook with. this is my 2nd item purchased. my 2nd purchase was the 10 qrt pot.they respond very quickly to heat adjustment and evenly throughout. i been cooking everything in them.the service is awesome too and delivery was fast and well protected. and comes with instructions how to best care for your products.i have a feeling i will be cooking with this for many many many years to come...
