Great for Gluten Free Baking
I bought this to use with brown rice flour and almond flour to make chocolate cupcakes for mother's day. My mother is gluten free, and its really hard to find/make great tasting cupcakes. This flour worked out great. Note, that I got the idea to mix flours from Giada De Laurentiis - the Food Network chef. She used a mixture of similar flours to make banana bread.

It is a great thickener.
It can be messy to use, and you have to blend it well. It does not like high heat. Otherwise, it thickens sauces, soups and gravies without an aftertaste.
