Q: Kind of a long shot, but has anyone played any of these songs on a 7 hole ocarina? Looking to find out how difficult it is to play 12 hole on 7.

Well, I have both. They are different fingerings obviously for each, but the complexity isn't too far off. I learned on the 7 hole, but with the 12 hole, you get a better range. They are both great. I wouldn't be able to tell you how to convert fingerings from 7 hole to 12 hole, but you cent really go wrong either way.

Yes. It works with 12 hole ocarinas. Just keep in mind it is tabs, not sheet music, and not all of them are the complete songs.

Q: Is it the Japanese fingering or the Taiwanese [or some other fingering]?

It is a fingering adapted from Japanese fingering. The upper end of available notes are a bit different, so if you're using tabs to play, the upper notes may sound different from the song because the fingering needs to be adjusted. If this happens, test a few different changes to the fingering to find the correct pitch.
