Q: Is there a way to plumb the faucet higher? I’m thinking 6” below the shower head so I can use it as a waterfall to rinse my hair.

You have to plumb it so you could technically put the tub spout wherever you want, however that would not be practical for that use. It only projects about 6 inches from the wall so you would be right up against it. Depending on your pressure, you’ll have the friction loss/turbulence across 4-90’s getting from the bottom of the mixer back up above it, varying by how you pipe it
