Fun kit to start with
Fun kit to start with. The directions are reasonably clear and it includes almost everything you need to get started. You will need to supply at least a quart jar in which to culture it. I just bottled my first batch and am waiting patiently for it to carbonate now.Update: it is working great. The kefir grains are easy to work with and the finished product is very tasty. I like it best with a fruit juice for the second fermentation.

Wouldn't waste my money
My attempt at making my own water kefir has been a miserable failure. You spend days waiting first for the kefir grains to hydrate, then another couple of days to make the water kefir only to discover you've got nothing more than sugar water with no carbonation. I read that it's common for kefir grains not to appear active for the first few weeks. How much sugar and spring water do you have to waste waiting to make a batch you can actually drink? I've made three batches so far and have poured two of them down the drain. The third batch isn't tasting any less sweet than the other two with no carbonation. I was really counting on this to work since I can't find store bought water kefir anywhere. And if the kefir worked, I was going to try the kombucha starter. At least kombucha I can find in stores.

Kefir Grains never came back to life
After 2 weeks of daily effort, the grains never plump back up. I’ve followed the instructions to the dot everyday, however all I get is sweet water. The rest of the kit is ok which is why they get the 2 stars.

get yourself a brew bag
I have been using this product for a few months now and it's fantastic. from day one this kit has been super easy to use. the one thing I will recommend is getting a small (a 9" X 12" Fine Mesh Bag is what I use so it has room to grow) brewers bag and toss your grains in there. I literally lift the bag out drain the water kefir into bottles for a second ferment with juice, fruit etc. and add sugar and water back in and place the bag in and I'm done. Also, don't expect to get a fizzy soda like drink right off the bat it takes a while for it to get strong enough to do that but it will do it. Lastly, when using hinged top bottles remember to burp your bottles to let off excess pressure or it can rocket out the top and make a heck of a mess (you will understand once you have made your first few batch's as the grains get stronger). honestly just play with it and have fun with flavors.

Just doesn't take off.
I bought this and followed the directions explicitly and it never would gather enough yeast to fix.

Worked great!
I have made a few batches of this water kefir now using the same grains, the first batch never carbonated during the second ferment, but I think it is because it is so cold this time of year. I wrapped the next batch in a kitchen towel and put it in a warm spot in front of the heater vent for the second ferment and boom! It carbonated! The third batch, I added trace mineral drops and made sure to warm both the first and second ferment and even more carbonation! I think I found the perfect method! I flavored the second ferment with 1/4 - 1/3 cup tart cherry juice and topped each individual serving off with a bit more of the juice and it tastes great. Big fan!

These took about 2 weeks to fully wake up but since then I've been successfully making a 1/2 gallon of water kefir every 2 days! So far my grains haven't multiplied yet, which isn't a problem, but I'm super happy with them so far and haven't had any issues! The company is also really great to reach out to if you need it and their website has lots of tips and tricks if you do run into issues. I personally ferment these with an airlock fermentation lid on a 1/2 gallon mason jar and that seems to be working well and helping produce a light carbonation!
