Can these be used for high heat sauces without melting?

I don't think anything hot could be used in this. I have only used them for packing salade dressing in lunches

Would these work for thicker consistencies such as sour cream?

It probably won’t squirt out but would be able to hold a small amount of sour cream. I have used them for salad dressing and BBQ sauce. They do not leak which is wonderful. Easy to use and easy to clean.

What is the exact size of the hole diameter for filling the bottle? What is the measurment inside the bottle from the bottom to the green collar?

The hole size is about 3/4" diameter or smaller.
