Does it include the windscreen?

includes the foam one that works moderately, but in windy conditions you might consider the furry dead cat to go over the foam one.

If i used a XLR to 3.5 adapter to plug this into a dslr would it work?

It needs phantom power to work. So, if DSLR has phantom power then it should work. I love this mike, I use w/ fs700 and one on a portable Tascam recorder.

Will this mic work with the sony ex3 camera? and would it plug directly into the camera without any other components?

Yes as long as it has an XLR connection

Will this connect to a sony nxcam?

Yes, this Mic is a great fit for the NX5U and the NX100
