Q: Would this work for shoe inserts?

Temporarily--the foam will start to deteriorate of used as an insert for a long period of time.

Q: Can this be used to line boxes as a packing insulation for delicate items? Or is it too rigid?

it retains it rolled shape and tends to pull against the adhesive, which is very weak. if you have a box that fits the roll dimensions and cut each wall section to adhere individually, it might work. the inner corner of a box would cause the adhesive to fail if left as one sheet.

Q: Can it be used as lipo foam

I wouldn't know, it's designed as off loading padding for pressure wounds and ulcers on the feet.
