with ther management software can i set the unit to Bridge mode at 8ohms for 600watts ?

Yes bridge should provide 600 watts at 8 ohms

Does the nx3000d dsp work separately for the two channels? basically, can the two channels have different dsp settings?

Yes. In stereo mode you have separate crossover, gain and eq structures for channel A and B.

Doesn't work with 8 ohm speakers?

It will work with 8-Ohm speakers, though not at as high of a power output as lower impedance speakers. Take a look at the manual for the specifications, depending on the setup (bridged vs stereo operation).
