Q: are these microwave safe?

I accidentally microwaved mine for 55 seconds. Nothing exploded, and it didn't seem to transfer anything to the food. But I won't be doing it again, just in case, because they are indeed metal. I think I got lucky because it was for a short time.

Q: How stackable are they to save space?

Plates and bowls are stackable, but the cups are not...at all.

Q: what material is this product made of? under the enamel?

Not sure. Some type of metal. It does rust if enamel is chipped.

Q: what country are they made in?

I have no knowledge of where they are made, but having used them for two years now at scouting events and camps I can report that they have performed very well and only have on chip on one plate to this point. Certainly worth the price paid.
