Q: What size mallet (12 or 18oz) is best for woodcarving 1x2 foot designs using "standard" to "intermediate" tools?

In my opinion the 12oz. If your carving entails to do precise (fine) detailing, the 18oz will begin to hurt your hand. I find that the the heavier the mallet you have a tendency to hold it tight. With the 12oz your hand will be more relaxed & use it for longer and most importantly better control. It is a well balanced tool.

Q: Can this mallet be used for batoning a froe or is there a better option?

I've never used it for that. I'd use something a bit more solid though.

Q: Can this be used for jointing pieces together

Depending on what the jointing is like, i have used it for gentle tapping. Only thing is you need to make sure when using the mallet it strikes flat on your timber surface for best result.
