Can i replace the plastic wheels with my current rubber ones (7/16" x 7/8") ?

Not sure. There are standard push fit castors that I've had on most office chairs so would assume if you have had them on another chair should fir this one.

How high does this chair go at maximum?

Mine goes up to 76 centimetres to the top of the seat

What is the width of the wheels?

Each wheel is made up of two wheels which are 50mm diameter and 5mm wide which are placed 27mm apart on the axle.
