A: You would use this like a western chefs knife. It's not a butcher's cleaver. Rib cage, keel and wings of the chicken are fine, you can use the cutting edge. Use the spine of the cleaver to break leg and thigh bones. Cartlidge is ok on most meats but stay away from strong bones of animals that don't fly.
