Can any wood chip be used?

I use any of these wood chips, and each one gives a different flavor to whatever I’m smoking.These are safe for smoking food. I don’t know anything about chips of other brands or other class.

Can the chips be used without having the gun?

I’m not certain how you could get the chips to burn without the gun. The gun has a vacuum switch that sucks in air when you light the chips. The chips smoke immediately and the chips burn in a minute or two. The purpose is to capture the smoke. These little jars are small and the chips are like sawdust. They are made for a gun. If you want to use these in a smoker or BBQ grill then I would suggest getting a big bag of smoke chips made for them.

Don't want to use smoke gun. Will it work if I put a few chips at the bottom of a cast iron grille on stove top?

There are smoke boxes and large chips specifically made for that. These are fine shavings designed to be burned with a smoking gun, Not a grill. Use large chips soaked in water for that.
