It cooks one omelet at a time. You start cooking your omelet in the bottom pan. When the omelet is almost set, you put the top pan on to close, then flip so that it cooks on the other side. The short handles on the pans fit together. The set closes and fits well and comes with instructions and a short recipe book. Each pan can also be used individually for something other than a frittata.
