Incredible Bread Results with this cloche
I hesitated to buy it originally because Emile Henry items are expensive but once I received it and checked it out, I don't mind paying what I did because we are talking about a true quality item in every sense of the word. It's so well made & finished with that lovely logo built in. It's a beautiful accent piece I keep on my open shelving .... something of this quality doesn't deserve to be shoved into a cabinet. I also bought the black Emile Henry loaf pan so they are stored together on that shelf & are so pretty. Ok, now you know I think it is a beautiful piece of bakeware but you may prefer to know how it bakes bread. Well, I've baked bread all my life and I was thrilled with the beautiful artisan loaves it produced. I used one Emile Henry recipe but the rest were from King Arthur Flours. The crust was incredibly crisp while the inside of the loaf was tender. It truly does hold in the moisture & produces the quality of bread it claims to. I'm 100% pleased. Easy to clean but remember, its ceramic bakeware so it can break if dropped. I'm loving the results. Very professional looking. Awesome product.

Bakes the best breads!
This bakes a perfect loaf with soft, tender inside and a crispy crust. I bake two sourdough loaves a week and get the best result with this. I preheat it with oven, slide the loaves in on parchment paper, bake for 15 mins then remove the lid for browning the final 15. Perfect every time. Worth the investment.

Makes wonderful bread
I have been making more or more bread, largely using the recipes in Artisan Bread in 5 Minutes a Day, and this has made it all so much easier. Many recipes work better with steam, a steam over, or one of these. While the first two add external moisture, this keeps all of the moisture within the dough nearby and uses it to make steam. The result is a nice over spring and a rich crust. The size is plenty for my needs (tend to make 1 or 2lb loaves), and the bread releases nicely. I use parchment to make it even easier, but I imagine it would work well either way. The biggest con is moreso one for the overall process. Once you preheat the cloche, you will have a hot lid that you need to keep handy, but safe, have a hot base you need to put the dough on, and then put it all back together in the oven. I find having a free stovetop (always a safe place for hot stuff) and / or a well spaced 2nd shelf in the oven (again safe place for a 450 degree lid) lets me safely store the preheated lid while I add my dough. Highly recommended for any avid baker.

Beautiful & Bakes Great
The Emile Henry cloche is replacing a unfired clay cloche that developed a crack after just 9 months of use. I use the cloche one to two times a month, so I was really disappointed when the crack first appeared. The EH one is beautiful, the knob on the lid makes removing the lid much easier than the clay cloche which did not have a knob or good (safe) way to lift the lid. The EH cloche is easier to clean. The clay cloche was half the price of the EH one, but after just 9 months - useless. I have a EH baking tile, it too is much better than clay tiles I have used

Best Bread Cloche or Pan I've Tried
I've tried all manner of bread pans and cloches. The Emile Henry dome cloche works best. It does take a lot of room in the oven, however. And it is fragile, and weighty when filled with dough. What's more, it is an investment. But I now have two, and I don't expect to ever find a better vessel for baking.

No warranty when purchasing from Amazon store!
For your Emile Henry to have a warranty, your receipt must say “Sold and supplied by Amazon”. When you purchase through the authorized store, it will say “Sold by Amazon, Supplied by: Other”. But it, look at your invoice. You get no warranty on those products and their US warranty company won’t listen to any explanation. Nice stuff, but very expensive with no warranty.

If you are looking for a bread cloche or want to try one. Try this one.
I specifically purchased this cloche to bake my no-knead bread. With a little experimenting here is what I do to achieve perfect bread. The following steps have worked for me, and I hope they will work for you. 1. preheat the cloche i.e. the top and bottom together in your oven for 20 minutes at the setting required for your recipe. 2. Using a 10 inch plate measure your parchment paper to the diameter of the plate. Using a pair of scissors cut the parchment paper to fit the diameter of the plate then lightly dust the parchment paper with flour. 3. Shape and form the bread dough then position the dough in the middle of the parchment paper to let rise. 4. Once the cloche is heated to the desired temperature for your bread recipe slide the parchment paper with the dough on it onto the cloche plate and cover. 5. Bake your bread to the desired time then check with a thermometer to make sure it is done. I use the KiriAnne thermometer. 6. Using the parchment paper edge you can then slide your bread onto a rack to cool. Note: remove parchment paper from under bread after you put it on the cooling rack to keep bottom from getting soggy while the bread cools. I get perfect bread every time I use this cloche every couple of days without fail. The craftsmanship is wonderful. It is so easy to use and produces wonderful bread. I use this cloche in my Pacific Pizza Oven without any problems. Would highly recommend this cloche.

Great bread!
Even heat, can have soft or hard crust. Handles high temps well. I started making no-knead bread, one loaf every other day, for the past 3 weeks. It holds up well and still looks brand new, easy to clean. Worth the investment.
