Great book, poor service Hermes, Fab Amazon
Great book, can't wait to read. Amazon fantastic as I had real issues with Hermes the delivery company. No customer service from Hermes. I'm going to avoid using them in future.

A long-winded look at familiar concepts - almost too detailed to be of practical use
Masked in a lot of irrelevant detail and wordy examples are flavour concepts that most experienced cooks will have worked out for themselves. The essence of flavouring food is that you must understand that every human has different sensory responses, particularly taste and smell. What you are trying to do when feeding two will never work as well when feeding twelve! The skilled cook understands this and balances flavours according to some sort of acceptable average based on whatever knowledge they have of those eating their food. I found this book a bit tedious and gave it away to someone with more patience!
