General Sizing Rule: 1/2-inch sizing For cakes that shrink LESS than 1/8 inch (or not at all), AND you are NOT planning to cover with fondant. 1/4-inch sizing For cakes that shrink MORE than 1/8 inch OR your cakes do not shrink, but you are planning to cover with fondantPurpose of disks with center hole:Some bakers request a 3/8-inch center hole put in the disks. They use this to help them center their cake tiers on the disks by using a temporary dowel as they ice. If you do not chill your cakes before icing with the disks, you will need to put a temporary dowel through the disks and cake to make sure your layers do not shift.
