I am looking for this laminate top ti at least be 36"wide and 60" long

It comes in a sheet 48 x 96 inches. Keep the extra for more projects.

Does this have a backsplash and end cover?

No, this isn't a countertop. It is just a 4 ft. by 8 ft. sheet of Formica laminate only. It is approximately 1/16" thick and requires sizing and adhering to a prepped surface.

What is the box size it is shipped in?

The box was about 1.5 to 2 feet square by the width of the laminet.

I want to use this as a work top surface and be able to write in pencil on it and then erase it. Will I be able to do this?

Sure can ! Exactly what I am doing. Also dry erase marker. Worse case a spritze of alcohol sanitizer and all wipes clean
