Great vegetarian classic
This is a great basic vegetarian cookbook with what to eat and how to cook it. It's been around for a long time so the science is a little dated. It was written before the diabetes epidemic so things are kind of carb heavy. If you are lean and active, this is still the best kind of diet for you. The author is fearful of garlic to the point you might suspect she's one of those vegetarian vampires they have out west, so at least double the garlic in everything. It has a great section on bread and a good variety of vegetable recipes that I think you will like whether or not you are vegetarian.This is the third copy I've purchased. I wore my first one out and this one was for a gift particularly for the kale-potato soup recipe. In a way it is a charming readable storybook packed with recpies. I don't think she intended it that way, it's just her personality.

A good cookbook that avoids “trendy” or unusual ingredients.
A great, simple, old-fashioned cookbook for those just starting OR well done the road to vegetarian or plant based eating.

Good vegetarian recipes!
I love this back to earth cookbook. I regularly make yogurt, buttermilk, bread and lots of healthy veggie recipes that are now family favorites.

Enjoyable read, so-so recipes
I feel kind of nostalgic about Laurel's Kitchen because an earlier edition was part of my introduction to meatless cooking in our co-op kitchen back in college. At one time, this book and a handful of others were the only vegetarian cookbooks "out there." I forgot about it for many years, then it came to my attention again and I purchased this updated edition.There are so many other great vegetarian cookbooks out now that these seem slightly uninspired by comparison. I have made several of the recipes, and despite following them to the letter, each and every one seemed kind of bland. I had forgotten about that factor, or I guess I didn't mind it at the time. I have zippier versions of many of the recipes in other cookbooks, but for some people, the blandness and simplicity could be a plus. I think this is a good basic handbook for someone new to vegetarian cooking who is not looking for anything spicy or exotic. The book is enjoyable and informational to read.

Reliable, tasty, and healthy
Laurel's Kitchen is the most reliable cookbook I've every used. I've been cooking on my own for about 8 years, and I've never had a recipe from this book not work. Not only that, but the recipes are simple, very healthful, and taste great. I often cook or bake for snacks or potluck dinners at dances, and usually use recipes from Laurel's Kitchen. I frequently get compliments or see people going back for seconds. My only wish is that Laurel, et al., would make a new release: The foods that are readily available have changed since 1986, and the section in the back about nutrition could be updated.

Wonderful for the New Vegetarian or anyone who wants to Cook healthier Meals!
I discovered "Laurel's Kitchen" years ago, when the first edition came out, back when I started experimenting with whole foods, and was looking for simple, sensible recipes to match my busy lifestyle. I wanted stuff that tasted good, too. Back then, too many health advocates were of the "beansprouts-and-sawdust bread" variety, and I hated that stuff. Laurel's recipes were delicious, most were easy to fix, and I loved her warm, friendly vignettes about her friends and the healthy lifestyle. Her new book hasn't changed a lot, just updated, and I recommend it highly. The whole foods lifestyle is sensible, economical and just plain logical for anyone serious about living a healthy sustainable lifestyle.

My 3rd Copy of this cookbook!
I bought my first copy of this cookbook when I first became a vegetarian back in 1980. I remember giving one to my daughter when she decided to go vegetarian years later. Now as hubby and I slip into eating more meatless meals, I’ve bought another copy to make certain we are getting balanced proteins. The knowledge in this book is unsurpassed!! I was so happy to find it still available - it’s always been my go- to!!

Cult vegetarian cookbook that stands the test of time (and lots of use)
A cult cookbook for vegetarians. It's old but it's a gem - you'll find countless vegetarians have much-loved copies of this, so well-used that they're falling apart.Yes, it is a little preachy in parts. Great if you like that kind of thing (I don't) but remember you can always skip past it. The most important bit is the recipes, and on that front this book really delivers!Funnily enough, for such a stridently vegetarian book, these recipes always get me compliments from non-vegetarians. It is ironic that the delicious recipe for lasagna, which involves walnuts, spinach and a lentil tomato sauce base, gets so much praise for its 'meatiness' from non-vegetarians and vegetarians alike! I think they are surprised by its depth of flavour - it isn't your typical bland lasagne and in my view is really quite an amazing recipe. The same goes for other recipes in here - healthy, but cooked up (ha ha) with real attention to taste and flavour. Generally on the wholesome side, and not really fussy gourmet fare, but there is a place for each of these things and the recipes are truly delicious.One of my favourite books. Almost everything I've made from this has turned out beautifully, and I still have lots of dog-eared pages marking things I'd like to try cooking next...

One of the best protein balanced recipe books found.
This is a long awaited 2nd copy of this cookbook. The first one I had only a week before I gave it as a house warming gift. My friend raved about it and I was stuck using the original Laurel's Kitchen. I looked in book shops for years off and on. My daughter in law advised me to try Amazon even though the book's publishing date has past the 25 year mark. I found it immediately and purchased it. It is an excellent vegetarian cookbook. I am thrilled that I finally replaced it. Thank you Amazon so much.

Was hoping for the original book
The book is fine but I have been searching for a copy of the original book which had a long intro about community which has been left out of later editions and which this copy is. The book is quite useful though and I'm delighted to find a recipe for dosa and the masala potato filling that I've recently come across in a new Indian 'Canteen' here in Newcastle. It makes me want to try more of the recipes.
