Amazing book for Keto Diet
I started the keto diet on Dec 1, 2023, and have lost 28lbs so far. I collect cookbooks, and wanted more inspiration for my new WOE - and the old South Beach Diet books are a favorite. I was so delighted to find Dr. Agatson has written a keto cookbook, that I ordered it and read the first 90 pages in one sitting. Dr. Agaston has once again created a book that gives you the science behind the WHY it works, and included a wonderful selection of delicious recipes with easy to follow directions and beautiful pictures. I've tried the chocolate chip cookie recipe and I kid you not, those cookies taste like Almond Joys. I ordered a second copy for a family member who is interested - and will continue sharing it with the people in my life. Highly recommend.

The Latest Science
This book brings together the latest science of not just weight loss but preventive health. I am seeing headlines everywhere about sugar and your health. Dr. Agatston pulls together the latest and most relevant studies that point toward the importance of lowering sugar and refined carb intake to lower your insulin levels. Eating too many carbs for a long period of time can give you heart disease, diabetes, and more -- in addition to weight gain. Restricting carbs to a really low level is what drives the keto diets that are out there, but this plan is an easier and healthier option that does not restrict carbs too much and doesn't cut out whole food groups, but helps you make better choices among the foods you eat. For example, once I really focused on how much sugar is in the red grapes and bananas I always bought for my kids and myself I switched to raspberries and blackberries instead and saved loads of grams of sugar. There are also many areas of confusion that Dr. Agatston clarifies, like whether or not meat is bad for your heart (it's not according to the science) and whether to drink skim milk or whole milk (whole milk!). This book goes into detail on the science, much of it is interesting though if you would like to skip to the plan itself the book is organized to do that. The plan is laid out simply and includes lots of recipes. I've tried several of the recipes and have found them to taste good and I like that there are a mix of everyday foods with some dishes that I haven't made before. There are super simple swaps that can cut out so many of the carbs we eat, once you make those swaps its pretty easy. (like using almond flour instead of white flour, or erythritol instead of sugar) . In terms of the daily plan, its a helpful guide but I don't eat some of the things that are in there, so I customize it to what I like. The plan is flexible in terms of how to do that. I feel so much better day to day when I eat this way, it's an adjustment at first but after a few days or so it feels easy and I feel more sustained energy throughout the day. I know the author, Dr. Agatston, so it's even easier to know that I can trust the medical advice. He is a cardiologist and preventive health expert so it gives me confidence that it's advice I can trust when there is so much confusion out there about diets.

Modified South Beach Modified Keto
This is an updated South Beach plan, which is pretty popular and HAS worked for friends of mine, so it's not a goofy diet. It's based on lowering carbs and harmful omega-6 fats (non-omega 3 veg oils esp found in prepared foods) and adding protein, few starchy carb vegs and almost no sugar. For those whose doctors allow it, it's a fairly trouble-free regime to follow, with steps to reduce your carb and sugar (mostly) and have you eat whole foods primarily. It's not vegetarian nor vegan. The updated South Beach is keto style but with more protein that typical keto diets, and aimed at insulin-resistance and prediabetes: we ran a "contest" in my office essentially eating like this, measuring blood sugar levels fasting and post-meal and it was interesting as some of us are insulin resistant and one person on the staff was diabetic type II. Then we had a contest to see who could get their levels down the most. It took me eating no sugar, no bread and eating at proper intervals to get my levels to "very good" and that took six weeks. My other contestant had more difficulty but when she went back to her doctor, she had some good progress to report. The kits to measure blood glucose aren't terribly expensive so if you are curious, you can buy one but of course, anything you do, check with the doctor as diabetes is serious and not to be ignored or self treated. But you CAN lose weight and eat things that make your physiology healthier. The book has plans laid out, the usual anecdotes (I skip those, if some guy loses fifty pounds good for him, but he's not post menopausal and a woman. By and large, guys can lose weight easier because they have a different makeup.)The recipes are a bit scant but useful; I was somewhat disappointed in the breakfast choices and of them, I'd probably rely on what they call "egg cups" and what you might know as "egg bites" --steamed scrambled eggs with ingredients added and made in a silicone cup mold in your Instant Pot. They are grab and go type foods and fairly satisfying, plus you can make them in advance if you don't mind cold food and dash off to work with egg cups in a ziplock to eat so you have had breakfast.I do know this will work; low starch and low sugar and low omega-6 oil is nothing new but the plan laid out leads you through this and to maintenance, so it's easy to follow.

Very Informative
My expectations were not high after being disappointed with many other dirt books. I am happy to report that I was very happy with this book. It has a few very readable chapters with excellent information and explanations of how and why the diet works. It then has many doable recipes along with color pictures. I highly recommend this book to anyone serious about losing weight.

Excellent results!!
I went on original South Beach diet number of years ago and lost 25 pounds. The Keto South Beach, I found, is excellent and I just lost 20 pounds in nine weeks! Most difficult thing for me was giving up bread, at first. I bought Almond flour and made tortillas and tortilla chips, which was good, but after month or more I did not miss bread so craving seemed to subside. I did get a “ keto rash” on my back but after abit of research found that drinking salt water eliminated that problem so was able to remain on diet. Very happy with results and feel much better!!
