Update International (KGE-10) 11" Forged Cimeter Knife

My intention for this knife is mostly just to cut boneless meat into strips, pieces and slices. The raw meat was getting suctioned to the blade with my other knife. Like my other knife, the blade for this knife was fairly sharp out of the box. Not razor sharp, but still sharp enough for me. This santoku has divots and they help a little for the meat not to stick. It still sticks, but easier to remove from the blade. The handle seems to be quality build, full tang and thick enough to my liking. It is rounded square which is okay because it has the little grip on the end of the handle so it won't slip too bad. I like that the finger guard doesn't extend down to the edge of the blade. This makes it easier to sharpen.Overall, I wish the divots extended higher on the blade and that the divots were deeper so that the meat would not suction onto the blade. I may decide to get a granton edge and a shorter blade height. (slicer) I knew what I was getting with this knife, I just wish it had prevented the suction from happening completely. I will also try getting a surface to peel the meat off the blade. So far, I'm pleased though.

Great deal on an excellent cleaver. This is a heavyweight, meant for bigger chopping tasks. Very sharp right out of the package. The handle is very comfortable, allowing for confident chops. Hand-washing with immediate drying is the best way to care for this tool. I use a sharpening steel on it before almost every use, and it has stayed nice and sharp. It slices right through chicken and turkey bones like butter! I've also found it very useful in cutting through beef bones, such as after cooking a prime rib roast.Make sure you have a quality, thick cutting board when using this. It could cut into the board if you swing too hard. Really, this is no wimpy cleaver like you often get with low-cost cutlery sets. It would be excellent for butchering pork, beef, lamb, foul and wild game. We also use it to quickly cut apart lobsters. We like to buy larger lobsters. They tend to have very hard, thick and stubborn shells. This heavyweight champ makes quick work of them!You could pay far more for a quality cleaver, but why? I highly recommend this fine kitchen tool!

I got this especially for Thanksgiving because I knew none of my existing knives or scissors would be able to safely or easily allow me to spatchcock the ~25 pound turkey we ended up with this year. The cleaver arrived plenty sharp and ready to go. It was extremely easy to take out the backbone with this and then hack up bones later for stock. Comfortable handle. It was also plenty sharp enough to clean up some fat and otherwise trim up the turkey before roasting. One blow to the breastbone made cracking it and flattening the bird easy when it's usually a chore, even with a smaller turkey. I did purchase a heavy, cheap cutting board just to use with this cleaver based on what other people reported it doing to their cutting boards and/or counters. And it did make some serious cuts and gouges in it while hacking up bones. Heavy enough for the hacking, but easily handled for some trimming, it was exactly what I needed and great for this sort of task. Probably a little heavy for routine, everyday use. I carefully cut the plastic packaging so I can slip it in and out for safe storage since my butcher block doesn't have a spot for a cleaver.

I was looking for a cleaver to do some of the heavier work around the kitchen and despite being a little intimidated by them (always terrified of dropping it and losing a couple toes) I thought I'd get a cheapie one to try it out. The blade and handle are nothing special but it feels nicely sturdy in your hand. The handle is not as slippery as I'd worried about but it is heavy so still warrants some caution. For my first task I chopped up some chicken legs on a chopping mat on a wooden block. This just went through bone and all with little effort, beautiful sharp cuts.I have continued to use it in place of my chef's knife for large vegetables and bone-in meats and in a month of use I haven't even had to sharpen it yet. It still cuts bone-in chicken into small pieces like a razor. Now that I've had a chance to get used to it I am using it more and more and don't think I'll buy a "better" model for more money, this one is perfect for what I need.

This is a great knife! This is quality made (a professional level) very sharp and appears to be holding it’s edge. The ergonomics of the handle are great for my hand size. Of top of these the price was very good, especially considering the cost of it’s competitors. I use mine for cutting large pismo packaged products as well as doing the more delicate tasks such as cutting layers for cake. It has been absolutely great.

This is the BOMB! I first tried this out on a chicken wing on a plastic cutting board and I CHOPPED RIGHT THRU THE BOARD WITH A LIGHT CHOP! This is a HEAVY clever and its sharp. I LOVE it! My wife was pissed I jacked the cutting board but it was fun! IF you Need a clever then I suggest this one!

The Pom black handled Update International knives are a great choice for home cooks and they are full tang sturdy knives. I own a few of these knives and replaced some JA Henkles ever sharp knives which don't have enough heft or size to them. The U I knives fit and feel perfect in my hand and if I lose or damage one it won't cost me an arm and a leg to replace it, it's no wonder they are used in the food industry. Before trying these I bought a ten inch chefs knife at a well known big box store, which is made of the same type of steel but is stamped and not forged, and the blade chipped all the way down the edge the first time I sharpened it, It looks like a serrated edge now. I am very satisfied with the U I knives I have purchased and would recommend them to anyone.

The knife itself is impressive for its size measuring over 16 inches in total length, 11 of those inches are the blade! It came sharp but not razor sharp. After stropping it, it was shave sharp! I have 3 gripes with this knife. 1: It's very unbalanced and is point heavy, 2: the grip is too small and the handle is made of plastic, 2 For a knife of this size, one would expect it to be a little thicker than what it is to give it more heft! I supplied photos as the seller only supplied 1. The box the knife is sitting on was the box Amazon shipped it in. Way too large and was packaged with no protection just the knife in a half clamshell type package only protecting the blade. the handle is left exposed! It will do me for now until I can get a real Cimitar blade!

My husband really likes this carving knife. But we wish it came with a cover. That's the only reason we gave it 4 star rather than 5 star. But, it was a good price compared to other knives. So maybe they could suggest a knife guard when you view/purchase this knife.
