I'd like to use these for blocking knitting, but will the colors run with wet knitting pinned to the blocks?

I have used these for blocking my crochet and they work perfect. I use them with the steamer and the color does not come off on to your project to make sure the first time I used them I put an old sheet over the to make sure that the color would not run.

Does this mat have a mat finish so that baby can get some grip while trying to crawl or is it slippery?

It has a mat finish. Textured with small, cris-cross lines. They are made primarily for infants, toddlers and children.

Are the edges sloped?

No. They are straight edge pieces. They do not slope down to the floor.
