Affordable PlantPure Recipes Prepared with Ease & Simplicity - Yet, Power-packed with PlantPure Flavor and Variety.
Per usual the Campbell Family, et. al. are in fine form encouraging the world to "Eat Plants". Kim's cookbook companion to the soon to be released "PlantPure Nation" film documentary is a wonderful compliment to the growing arsenal of Plant-Based WholeFoodist cookbooks coming to the forefront. (Another of my personal favorites are the two 'China Study' cookbooks from Kim's sister-in-law LeAnne Campbell.)I absolutely LOVE the full color photographs accompanying each recipe to show you that eating plantpure is a tasty, flavorful, eye-appealing endeavor -- very much contrary to the belief that somehow eating plants won't taste good, or usually looks like 'cardboard' or 'wall-paper paste'. The colors and international variety of 'comfort food' recipes, show the cornucopia of plant-based whole-foods available to those who want to eat plantpure. 'Kim's Hints' mentioned with select recipes help the home cook embrace their kitchen with ease and simplicity. Her recipes are filled with plant ingredients that are readily available and affordable for any newbie plantpure cook, as well as, easy to prepare plantbased substitutions for disease promoting animal-derived products. Her Tofu-Cashew Mayonnaise is a staple in my pantry and a base foundation for many wonderful oil-free dressings & sauces. Cooking for a PlantPure Family is not so expensive, difficult or scary after-all!Interspersed through the cookbook are excerpts from the movie encouraging you to get on board the PlantPure Nation movement to change the way our government and local communities 'do' food. Personally hailing from a true 'food desert' Desert community, with an over-abundance of 'fast-food joints' and expensive corporate restaurant franchises make plantpure shopping difficult and greatly limits our families' local options to obtain a variety of affordable fresh produce for our table. Mainly because, ALL of our local communities food is trucked in from great distances with many of the local residents relying on a handful of distance-challenged, high-priced chain groceries, the Colorado River Food Bank, one 'Country Health Market' for specialty items/special orders, or gratefully, obtained from the newest source - an economical and increasingly popular volunteer run BountifulBaskets.org Food Co-Op -- to supply us all with a healthy kitchen pantry.Kim's recipes, highlight simple, easy to prepare, plantpure 'peasant foods' like beans - brown rice and home-made whole grain breads, and an abundance of recipes for affordable carrots, broccoli - cabbage & kale. Personally, we cut our food bill in half after transitioning to a plantpure lifestyle and Kim's recipes are a wonderful addition for any struggling plant-hungry family. The PlantPure Nation Cookbook will be an active resource at our Mojave Desert PlantBased WholeFoodist Society Recipe Exchange Meet-up group.I highly recommend this PlantPure Nation Cookbook to any plantpure newbie, highly seasoned plant-based home cook or those Vegan's looking for more oil-free plant-based whole foods recipes. The most realistic vegan recipe book ever
I have spent quite a bit of time in reading a lot of books ever since watching "forks over knives" And "what the health" along with some other featured videos available. This spurred me on to investigate recipes that would have a flavor, texture and taste to keep me on what I had adopted as a result to take meat, meat products, milk and dairy along with cheese out of my diet. I have been diagnosed with adult onset diabetes and dealing with that for about two years. Prior to that I had been borderline diabetic for about 10 years. Being Italian it was natural for me to turn to high carb foods and cheese-laden foods along with fresh homemade bread. I tell you these things so you know that I come from a history of loving all of these foods and coming from a family of where I was brought up to think that this was very healthy eating. My father who was a doctor died of colon cancer. I remember him loving to eat his steaks at least 2 to 3 times a week. I would come downstairs and see that he had asked my mother to fix him a pack of hotdogs to eat as a snack before he went to bed. I grew up as a "chubby "child. When I was young, it was cute, but as I got older, it became a trademark that turned me into a socially unacceptable young person. This also added to my depression as I grew up. I was constantly going on diets and losing weight only to put the weight on with an added few more pounds. When I married at the age of 22 and had my first child soon after that is when my real problem started. Each pregnancy left me with more added weight. Once diagnosed with adult onset diabetes at the age of 62, I begin evaluating that there was something desperately wrong that needed to be fixed. This is when I started to become an avid reader and came across Dr. Campbell's book on the China study – what an eye-opener! It all made sense to me. Fortunately I am married to a man that very much wanted to be healthier in his eating and wanted to encourage me to do better in mine; so we both agreed to make a major lifestyle change. We went through our freezer and our cupboards and eliminated all the foods that we knew were not in line with vegan eating. This was quite a blow to our budget to say the least especially when living on Social Security income. But our resolve was strong and we forged forward in now getting the supplies of food that would change our lives forever. Going to the grocery store and even viewing Beef, chicken, pork and fish along with all the cheeses and milk got to the point where it would make me even nauseous. I would think to myself, how can people even eat this stuff, and yet this is what I had done for years. Now with only a short time in a changed lifestyle of eating, I have noticed improvement. Not only have I lost weight, (over 70 lbs, although I have much more to lose), but I have cut my diabetic medicine in half. My blood sugars range between 80 and 90 and that is with just half of the medicine I was taking. My A1c Has been 5.6. I am looking forward to going to see my physician within the next month and hopefully I will be able to completely come off of my Metformin and Lantis injections. This recipe book has been one that has offered the best tasting food ever. It has given me recipes that I have been able to turn to when I have have a yearning for something from the past, although I must admit my cravings for those foods are less, and my taste buds are changing. I have come to realize that there is always something on the menu in a restaurant that I can pick from and stay healthy in my eating. I know the next few months will only show a greater improvement in my well-being. Of course, my husband is extremely happy and has realized an increase in his energy level and also dropped several pounds although he did not have very much to lose. But being able to do this together has been a great encouragement for me and brought us even closer together as we have shared the kitchen in cooking things together. He is my greatest advocate and helper. I encourage anyone that is looking to feel better, be better, and become healthier to read Dr. Campbell's books and the experiences as given in the videos of his son, and to use this cookbook in your strategy to start a healthy vegan lifestyle. I am greatly indebted to all the investigation and collaboration that the Campbell family has made available to us. Thank you, thank you, thank you.

This cookbook has become my go to cookbook!
Love this book!! Very simple and basic recipes that are just plain yummy!! Buy this book; you will not be disappointed—-you’ll be glad you did!

Lots of great, simple recipes + photos
I just received this book and have glanced through it a couple times. Lots of great, simple recipes and pictures. Easy to read too. I've taken the Plant Based Cert. course through T. Colin Campbell, and eCornell, and I watched PlantPure Nation. Happy to have this book to add to my growing collection of plant based cookbooks.Pardon the poor lighting in the photo, however, it should at least give an idea of the lettering style, ease of reading and the great, full page photo.I def. recommend this book, for newbies to whole foods, plant-based diets, those who have been cooking plant based but always enjoy new inspiration, anyone wanting to start preparing more plant based meals, and those who love collecting cookbooks!

Good plant-based veggies but somewhat repetitive
The PlantPure Nation Cookbook has been a truly inspiring addition to my kitchen. The over 150 plant-based recipes are creative, nutritious, and easy to follow. I plan to follow a plant-based diet, and I can use quite a few recipes from this book. I want to explore new cooking methods while incorporating more fresh produce from my garden. I love how the cookbook emphasizes whole, flavorful ingredients. The dishes are perfect for both seasoned cooks and beginners, offering a variety of options that appeal to all tastes. This cookbook has deepened my passion for healthy cooking and provides opportunities to share meals with my children and grandchildren, who also want to eat healthier. I took off one start because after a while, some of the recipes seem repetitive.
