Can you use headphones with the nektar se25 usb midi keyboard controller?

The Nektar SE25 doesen‘t have an incorporated audio interface. Therefore you can not use headphones on this MIDI Controller. TRIKON Customer Service

Does this work with fl studio?

I do not have FL Studio however the speclist confirms that it works / integrates with FL Studio. It`s a great keyboard

Does it work with Simply Piano?

Probably, but if you are using simply piano to learn then this isn't the product for you I think. It's only got 2 octaves and is not suitable for 2 hand playing. I use it with my sequencer for inputting notes, editing and playing chords and single lines, not as a piano keyboard.
