Can you adjust the grind?

no. you can't. It is the perfect grind for their coffee pot, according to the technivorm people.

How messy is this grinder when compared to others? We’re looking for one that doesn’t throw coffee chaff electrostaticly all over our counter.

I don't think this grinder is messy at all. Any chaff or dust from grinding is contained in the collection container. The messiest part is cleaning the mesh screen protecting the grinder blades.

Can you grind spices with this?
